Gildas
Inspired by Lennox Hastie’s time in the Basque Country, Gildas (the sister venue to Firedoor) is an homage to the original pintxo, created with three simple ingredients: a Guindilla pepper, an olive, and an anchovy–named in honour of the film Gilda, which screened at the San Sebastian Film Festival in 1946. The Gildas menu is an exploration of Spanish and Australian produce – a space to come together, share small plates, tell stories, and enjoy a sherry.
